Why this conversion is tricky
Yogurt sits in an unusual measurement category because it behaves like neither a true liquid nor a true solid. The live cultures suspended in coagulated milk proteins create a semi-set gel that holds its shape when you scoop it but flows when you tilt the container. This means a cup of yogurt does not self-level the way milk does, and air pockets get trapped against the sides of the measuring cup if you are not careful. Plain whole-milk yogurt has a density of 1.021 g/ml according to USDA FoodData Central, which puts it almost exactly at the density of the whole milk it started as, because the bacterial fermentation that turns lactose into lactic acid does not meaningfully change the mass per volume. The single most common mistake is treating Greek yogurt and regular yogurt as interchangeable in volume measurements when a recipe was developed with one and you are using the other. A cup of Greek yogurt contains roughly twice the protein and far less water than a cup of plain yogurt, so swapping them one-for-one in a cake batter or marinade gives you a thicker, drier result with different acidity. Recipes written by weight sidestep this entirely. Recipes written in cups assume the style the developer used, which is rarely stated.

The reason is that yogurt's gel structure resists settling into a graduated liquid measure cleanly, and you cannot read the meniscus on something opaque. Density matters most for baked goods where yogurt provides both moisture and acidity, and for marinades where the ratio of yogurt to other liquids determines how the protein denatures. Quick breads and muffins relying on the baking-soda-plus-yogurt reaction depend on getting enough acid into the batter. Use too little (because you measured Greek yogurt by volume into a recipe written for regular) and your leavening will not fully activate, leaving a denser crumb. In cheesecakes and panna cottas, the water content of the yogurt directly affects whether the dessert sets firm or stays loose. Tandoori-style marinades and Persian khoresh dishes rely on yogurt's enzymes and acid to tenderize meat, and a thinner yogurt simply slides off the protein instead of clinging to it. Frozen yogurt and tangy ice cream bases are the most sensitive because the ratio of milk solids to water determines ice crystal size, and Greek yogurt frozen the same way as regular yogurt produces a chalkier, harder texture.

Buttermilk substitutes well in baking by volume but contributes more liquid and less body, so reduce other liquids by about a quarter. To turn regular yogurt into a Greek-style stand-in, line a sieve with cheesecloth, dump in twice the volume the recipe calls for, and let it drain in the fridge for two to four hours; you will lose roughly half the volume to whey. Going the other direction, thin Greek yogurt with a tablespoon of milk per quarter cup to approximate regular yogurt's pourability without changing the protein content much.
